Tempeh, Raw Sauerkraut, and Kombucha. Viable Cultures offers delicious, nutritious, hand-made, naturally-fermented foods, made with organic and locally-grown ingredients. Local ingredients include cabbages grown in Asheville and soybeans grown in Old Fort. Production takes place at Blue Ridge Food Ventures, on the A-B Tech Enka Campus. These fermented foods are available at groceries, served at restaurants, and sold at farmers markets and direct to customers by special order.
